refreshing mango coconut drink

I’ve been waiting ALL SUMMER to share this recipe with you. This is definitely on Ben’s favorite list. (Dakota, you are your husband is gonna love this one!) I have been eyeing every pile of mangoes I’ve come across since May, but the stores have yet to produce the perfumed mangoes I’ve been holding out for… so I finally just bought one and have been patiently waiting for this guy to ripen:

This mango-coconut drink. YUM.

If you’ve been to Hong Kong, chances are you’ve hit up the famous dessert place Hui Lau Shan at some point (if you clicked the link, hover over the leftmost photo with the black background and “50th… I’m back!” on it). That’s what I’m talkin’ about. The frosty mango beverage is topped with a generous layer of slushy coconut milky goodness and juicy, sweet mangoes. Mmmm I look forward to this every time I visit!

…I am also always disappointed with the tiny cup I get every time, because when I’m dealing with that crazy HK heat and humidity, I want about 5x as much of the stuff as they actually give you. Good thing I have an easy recipe hack now! Not only do I save thousands on airfare, but we can have as much as we want! Wahooooo!!!

This is one of the recipes I knew I’d have to share when I first started this blog, so I really hope you give it a whirl! It’s great for making a big batch to share with friends– just double or triple the recipe.

Mango Coconut Drink
Makes 2-3 large cups

Ingredients

Instructions

  1. In a heavy duty blender, like a Vitamix, blend mango chunks and mango nectar until smooth. It should have the consistency of a thick smoothie. Pour into clear serving glasses, filling each glass a little more than halfway.
  2. Rinse out your blender, then blend together the ice, coconut milk, and sugar until smooth. It should taste a little sweet and have a slushy consistency. Distribute evenly in a layer over the mango portion.
  3. Top with diced mangoes.

Yes, it’s beautiful! Go ahead and take a picture of those lovely layers… and then stir it up so you can get a little mango and coconut in each sip and enjoy! Sip with fat straws or use a spoon to get some mango chunks in each sip!

Mm-mm yummy and refreshing!! =D

    Mmm I remember when you brought all these ingredients over to our house and made this magical drink in front of our eyes. I made this a few times afterwards (for my family who loved it) but forgot about it until now! Now I can save and remember forever. Will add small tapioca pearls next time too.

      Good idea! I did do it once with the small sago pearls, and it added a nice texture… but I forgot about it until now! Now it’s here and I can remember forever… :] Thanks!
