I first fell for huge, chunky slabs of dark chocolate shortbread when I made a pilgrimage to Extraordinary Desserts in San Diego. If you enjoy sweets and are ever within a 50-mile drive of the place, you MUST GO. There are two locations. Go earlier if you don’t want to be disappointed, because stuff sells out pretty quickly. Karen Krasne, please, please open up a shop in Norcal. Please. I bought your book and all the supplies you recommended in it, but then I had a baby and I haven’t made anything from it yet. I just drool over it and wish you would open up a shop up here already. Please.

One thing the gorgeous cake book does NOT include is a recipe for Karen’s extraordinary chocolate shortbread, though, so I’ve been on a mission to make something as close as possible. Her shortbread is not dry and sandy and crumbly like your typical shortbread (which I also love, but in a different way). It’s huge and mouth-filling and intensely cocoa-y in a way a small shortbread cookie could never do. I’ve tried a number of chocolate shortbread recipes in an attempt to recreate hers, and recently re-tried one that, for some reason, I passed up before: Dorie Greenspan’s World Peace Cookies. It got a second look because my friend Diana, over at Chomping Board, made some for us while we were providing her with a meal delivery (talk about hospitable!). I was sold. I went home and got to work on the new recipe that very week.

After making Dorie’s cookies according to her recipe- dainty little teatime circles- I decided to double the recipe and make huge rectangular slabs of it in an attempt to imitate the ones at Extraordinary Dessert. So I tweaked the preparation a bit and… GUYS, IT WORKED! Mine came out with the same parched-desert-looking crinkles across the top, the same melt-in-your-mouth chocolate discs throughout, the same moist-sandy texture I loved. Most importantly, you could really sink your teeth into each intensely cocoa-y bite the same way you could with hers. Yes, they sink in. Like I said, not your typical shortbread. Better, IMHO.

Mmmm heavenly salted caramel hot cocoa-- so easy to make!

Guys, I’ve been getting some serious writer’s block. I have plenty of material. Plenty of ideas… so many ideas. On teaching, on parenting, on marriage… and of course, food. I have stories and even some portions written out… but my brain is just not up for the task of pulling it all together into coherent pieces right now. PLEASE FORGIVE. Please stay. It’ll come back to me soon!

In the meantime, can I just share a super easy and super delicious recipe for salted caramel hot cocoa? It’s the ultimate warm-ya-to-yer-toes, rich, luxurious bowl of comfort. Mmmm.

Chocolate-dipped shortbread hearts 1

I have always dreamed of opening my own bakery. It’s probably not going to happen, because in addition to loving baked goods, I also love to sleep, and I hear being a baker + sleeping in are not compatible. Still, I love the idea of making treats and seeing that people would actually be willing to pay money for my stuff. That means they’re not just eating it out of niceness, but because they really LIKE IT!

A few summers ago, I decided to open up a virtual bakery, and I called it Sweet Dreams.

Frozen PB and Banana Pops Recipe

Yeah, I totally just added “breakfast” as one of the categories for this treat… and why not? Peanut butter? Bananas?? Sounds like 2/3 of a complete breakfast to me!

This is a similar concept to the chocolate-dipped frozen bananas concept I posted yesterday, but smaller, cuter, and stuffed with peanut butter! I also made my own “magic shell” this time with chocolate chips and a little bit of coconut oil. Overall, it’s a little more work, but it makes a much prettier result, don’t you think?

Slice bananas and pipe some PB onto half of them. I find a piping bag quicker, cleaner, and easier than spreading peanut butter on with a butter knife. Of course, a butter knife totally works!

Frozen Bananas Yum Yum

Frozen Bananas. The very thought of them makes me feel summer sunshine, vacation, and strolls near Laguna Beach. They always felt like a splurge, but never one that I regretted. They are incredibly easy to make, though, so no need to splurge! Now you can bring this carnival treat home to share with your friends!

I wonder if this is a SoCal thing, because when I made these for my NorCal friends, most of them had never heard of it before. Regardless of where you live, they’re a tasty summer treat and really easy to make. As an added bonus, kids will have a lot of fun poking, dipping, and eating these as well! Not to mention that they’re pretty healthy for you– bananas, nuts, and a leeeetle bit of chocolate. What’s not to love?

easy mint chip ice cream recipe

I know I always say this. But it’s true: this is hubby’s fav.

I’ve made so many ice creams– green tea, earl grey, strawberry sour cream, dark chocolate, mocha, salted caramel, coffee, vanilla bean, vanilla bean with roasted berries and streusel (brilliant, Lauren!), vietnamese coffee, honey lavender, blueberry creme fraiche, and… the list goes on. Sometimes, I will spend a whole evening creating a mess in the kitchen and proudly present my creamy creation to my husband: “TRY THIS.”

He obliges.

The house will smell of burnt sugar (when I missed the three millisecond window of perfection on my first batch of caramel for salted caramel ice cream) and the sink will be overflowing with more dishes than two pints should account for, and I will eagerly await his reaction… (DOYOULOVEIT?!?)

Hubby: Mm… it’s not bad.

Me:

Hubby: I like your mint chip better.

Me: (Deflated.)

But only for a moment, as I consider how this is probably a good thing.

hmm...

Do I really want my husband to love the ice cream that takes 20 dishes and 2 hours to make, or the one that takes one bowl and three minutes to stir together?

Exactly.

Scrumptious Chocolate Cupcakes
I made these mini cupcakes a couple of weekends ago for a family get-together. My cousin ate one… then two… then three. She walked up to me as she was peeling the lining off the fourth one, “Jojo. These cupcakes are so good. This is my fourth one!” Granted they were mini, but still. Eating four of anything can only mean good things.

I pieced this delectable recipe together from two of my favorite cookbooks: The Cook’s Illustrated Cookbook and Nick Malgieri’s Perfect CakesGanache is one of my favorite things, so you can imagine my delight when I realized you could just add some butter to it, whip it up, and use it in place of frosting and filling on cakes. Gateau Au Chocolat Fondant de Nathalie Recipe

cake resizedIt was 4:55 and I was expecting my family over at 5:30 for my mom’s birthday dinner. Thirty-five minutes. I bit my lip and skimmed the recipe again. It looked totally doable, but my own “mommy-brain” had also been causing me to make a number of mishaps in the kitchen lately, and I couldn’t afford that with just 35 minutes on the clock. I deliberated for about ten more seconds, then remembered how much we always enjoyed chocolate cakes for Mom’s birthday in years past. Today needed that little bit of birthday special, and I would bring it. So I set to action, taking every shortcut I could think to take (on an already-simple recipe) and hoped for the best.

Two Christmases ago, my mother in law gave us a huge tin of Starbucks Hot Cocoa Mix. I’m picky about my hot cocoa, and get especially snobby when people think hot chocolate mix and hot cocoa are the same thing. They. Are. Not. The packets you find near the hot water dispenser at summer camp are way too sweet, and they can be mixed into water. They serve their purpose in warming you up a degree or two during chilly campfire sharings that go late into the night, but… that’s about it. My cup of hot cocoa is one that is mixed into hot milk, offering a warm-you-to-your-toes balance of creamy dark chocolate goodness and just a hint of sweet.

Food Part 2 122

One of the highlights of attending UC Berkeley was the easy access to inexpensive good eats. One such place was Raleighs, on Telegraph. The first time I ate there, a friend ordered a huge hunk of mud pie. While it looked tantalizing (ice cream and Oreos– what’s not to like?), my first thought was, I could make that for a fraction of the cost! So… I did. The next day, I pieced together four simple ingredients and wowed my friends. It was just as easy as I had hoped, and it was one of the first recipes I created and shared (on Xanga, if you’re old enough to know what that is!). A crowd-pleaser with just four ingredients and a practically no-fail guarantee– what more could you ask for?
