Roasted Cauliflower and Aged White Cheddar Soup

I’ve made this soup twice in the last couple weeks since I came across it, and I can’t wait to make it again! Alton Brown tell me cauliflower is quite healthy for you, so even though I enjoy it roasted, it’s exciting to find a new way to savor it. The flavors in this soup are AMAZING: complex, a little smokey, unexpected and so delicious. Perfect for a cool day like we’re experiencing today! Husband loves it. Toddler loves it. Friends love it. It’s simple and heart warmingly delicious! Try it out!

A few years ago, a friend hosted a soup swap, where a bunch of us met and swapped quarts of soup. It was an impressive affair, with soups ranging from oxtail soup to clam chowder to Tom Ka Gai.

I was relatively new to cooking and had never really made soup before, so it took me a while to figure out what I could manage. I decided to go with butternut squash soup. I actually thought I was going fancy, because for me, peeling and cutting up all that squash seemed so labor-intensive! I packaged my soup with some “homemade Acme baguette croutons” on the side, hoping that it would convince people to PICK MINE!! 🙂

The event was pretty fun, and I came home with a nice variety of soups to sample. I did, however, decide that butternut squash soup was too much work to make, so I didn’t really consider making it again… untilllll…

Terrific Turkey Chili RecipeOh happy day, my new food processor arrived this weekend! I was SUPER eager to test out the blades, and I couldn’t think of a better way to do that than to slice and dice a few bell peppers, onions, and zucchini for my husband’s favorite chili!

Yes, yes, it’s summer… and at 85ºF, it’s not exactly chili weather. It’s allllll good. A little sunshine never stopped us from enjoying foods we like, no matter how warm or unconventional! I love this recipe because it’s like a whole meal in one dish– meat, veggies, dairy, and carbs (errr do tortilla chips count as carbs? =P). I appreciate that this chili is packed full of healthy veggies but tastes so comfortingly delicious! Be sure to use the taco seasoning with the turkey. You won’t even miss the beef.
